Michael Penn and Patrick Warren were excellent together on the old Unplugged (back when Jules Shear was the host). I really should hunt for a bootleg of that.

I'm one of the few Elvis Costello fans who liked The Juliet Letters with the Brodsky Quartet, and I've watched some great acoustic performances of his alone and with Steve Nieve.

Joemy Wilson's Carolan's Cup and Carolan's Cottage are great Irish Celtic CDs with her on hammered dulcimer plus other players on guitar, etc.

The acoustic songs on Led Zeppelin III are classics- I really like Bron Y aur Stomp and Hats Off to Roy Harper (the slide rhythms in that are damn fun to play)
 
Green Day - Time of you Life (absolute favorite)
most of the MTV unplugged stuff, and anything unplugged with stevie ray vaugn.

I'm a huge unplugged music fan.
