Probably Princess Bride... I've already watched it a couple dozen times and I never get bored of it. Years ago, I'd have said "Monty Python and the Holy Grail", but I've watched it over 100 times over the last few decades... I'm sick of it.

Forrest Gump, Vanilla Sky, Fight Club and American Beauty all have great replay value for me.

T2 is also my favorite movie evar!
