You're entitled to your opinion, fact is the joke would have been fine without the word
union.
Contrary to what the PC police will have you believe, harping on stereotypes is a legitimate source of humor. To all but the foolish and ignorant, the stereotypes are both obvious and not meant to be assertions that all members of the referenced demographic fit the stereotype. Jokes like this one are classic of a type of joke told by one group at the expense of another. If I had a good joke where the executive was the target of the punchline, I would share that too. This particular joke is at the expense of union workers. Boo effing hoo for them.
Another key facet of this type of joke is that the more specific the stereotype, the funnier the joke. This also goes against the preachings of the PC nanny staters. In this case, using "worker" would have been funny, but using "union worker" is funnier. The PC version would have been, "selfish not representative of any specific demographic group abuser of the system guy". PC jokes aren't funny unless they are at the expense of the PC crowd.
