I have really come to hate bottling... I've asked the wifey to indulge me and let me buy myself a kegging setup for Christmas and she has provisionally agreed...

Wednesday I bottled a Belgian Ale and used my 32oz bottle... it won't be 'ready' for another 12 days or so, but I have a double IPA, an American IPA and a cider in rotation right now so I wasn't worried....

Anyway, I bottled the belgian and filled my 32 oz... in the process I thought to myself, "Self, you should pick up three more of these and bottle a gallon all at once, to save yourself 1/5 of hassle (out of the typical 5 gallons I bottle). Well, directly after bottling the Belgian I did order those extra bottles and they're currently in the mail.

It's been a long week, with lots of work and school, no fun, really.... When I got home I had a 24oz bottle of the double IPA, then one of the American IPAs... when I popped that one, I decided to 'fridge a 32 oz bottle of the double IPA... but see here's the problem... that 32 oz bottle is actually the Belgian ale I just bottled... oops... somewhere along the way I misremembered and cracked this Belgian that I'm drinking as I type.

It's actually very good and tastes just like a Belgian, which confused the crap out of me when I thought it was a double IPA... the reason I'm concerned is that it's quite carbed for only 2 days in the bottle... I'm a little concerned that I'm making bottle bombs :Q

Cliffs:
1. Bottle beer 2 days ago
2. Drink a bunch of other beer and forget what i just bottled
3. Accidentally crack the beer I just bottled and find it a good match for style and surprisingly carbed.
4. Worry that the other bottles will explode from pressure as they age
5. ... (drink some more beer) ...
6. profit

I was woken up one night with one bottle of freshly bottled beer after another exploding in the cabinet under the kitchen sink. The weather had changed and the sudden change in atmospheric pressure was too much for them. We were tiptoeing around in beer while carefully taking the unexploded bottles one by one to the porch, praying they wouldn't blow up in our hands. What a mess. Now, I always store homebrew in plastic tubs with lids. Heh.

Winemaking can be just as messy. You wouldn't believe how much peach puree you can get on your ceiling if the initial ferment is vigorous enough to spray it through the airlock. Hehe. Now, I keep carboy in the bathtub with a bag over it for the first 24 hours.

I need to buy a new kettle and brew some beer.
