YAFoodT: What wine/drink to serve with this dish?

I'm cooking Tuscan Salmon, which is salmon that's browned and then backed on top of a bed of spinach that's soaked in a wine/red grape mixture that is made in the pan the salmon is browned in.

I can't serve red wine, can I?

Also, the recipe calls for a dry red wine. I think I used Cabernet Sauvignon last time... any suggestions for a wine that might taste better, or a certain brand of Cab?
 
yes red wine with fish. And as far as taste it all depends on how much you liek wine. Wine is something you usually need to grow into meaning at first the cheaper (less expensive) wines will taste better to you than the pricer ones.

EDIT: Lindemans Shiraz is a pretty good red wine that doesn't cost much at all.
 
I'd go with a light-medium fruity red.

The only reason for the red, is because you used it in your sauce. Otherwise Savignon blanc would be nice.

So I should use that to cook with, or serve it? Or both? Is it OK to use it for both purposes? I would think that would be too much of the same thing.
 
Chianti for a dry wine. Easy to cook with. Are you using shallots with the recipe?

As for seriving...hmm, I would go with something that has body to it. A robust cab would work.

Tuscan Salmon, eh? Try this from today's ATOT selection.

Joking aside, the best wine to serve is wine you enjoy drinking. Color or type doesn't matter if you enjoy drinking it. As a second best alternative, serve what you used in the food (I'm just backing up what others said above).
 
if you're using a wine to cook, you can (and should) use it to drink as well.. white is usually good for fish, but if you're using the red to cook, then drink the red too..
