Depends on the marinade. Generally 30 minutes for some of the commercial heavy marinades. Overnight for my favorite recipe.

Yeah, you really can't do it for too long. Too little time is more common. Overnight will allow oil to break down muscle fibers for the best texture and tenderness.

I would say you can't really marinate for "too long". A few hours if you're not doing anything too special. Overnight for something tasty :)

thanks for the tips :)

I cooked some chicken in some carribean jerk marinade off the shelf last night, but the chicken wasn't as flavorful as I'd like... I'll have to try the overnight marinade next time :)

I'm trying to eat healthy, but one can only eat plain boneless, skinless chicken with white rice so many times. haha.

If you stick with stuff off the shelf, you should be safe for overnight. Beware when making your own marinades, however, because alcohol/acidity will actually chemically cook the meat and make it really tough... so watch out when using citrus flavors and / or liquor in your marinades.

depends on your marinade, w/ acid heavy ingredients like vinegar, you probably don't want to marinade it for more than a day.

Dude, don't marinate! Make this Teriyaki sauce recipe instead. Pour it over some sliced chicken breast and serve on a bed of rice. It will be the best teriyaki chicken you ever ate in your life, and it's sooooooo simple to make.

Mush up some corn flakes and flour, dip the chicken in beaten eggs, then dip it in the flour mixure and deep fry it. Damn fine fried chicken ;)
