XP pro vs vista

I just built a new workstation using recommendations on this site. It will be used only for photo editing using PS, raw converters, etc. I have an intel 8500 running 4g of ram, I am setup with a main drive, storage drive, and a scratch drive using a 36 g raptor. I want the ultimate speed. One of the problems I have realized is that I can only use 1.7G of ram for photoshop in vista ultimate which I have. I understand I can configure xp pro to allow 3g in photoshop. Is this true? Should I switch?
Need good recommendations.

Very informative reading. I have CS2, so I don't know if I can access this ram. Seems windows Vista 64 is the best for accessing all the ram.
 
If you do have a CPU that can take advantage of a 64-bit OS, you should consider the 64-bit Vista.

The only problem I have with it (Vista 64) is that there is no VPN client for it. So, I use virtual PC 2007 with the 32-bit version installed on it for VPN.
Everything else is fine for me.
You need to check to see if you can run everything you need on it.
