I just getting into this (haven't played Enemy Unknown or the original DOS Xcom) and theres an option to enable Progeny and Slingshot missions. Are those really tough or annoying because I don't want an ironman/marathon type experience.
 
I don't know about Slingshot missions, but Progeny missions are not difficult. You will obtain some pretty awesome psionic soldiers in the process.
