I may be a bit biased, but why would anyone go with a product like Hyper-V when ESX has been around and is a proven performer.
You also have to think about how much support Hyper-V is going to have for operating systems other than Windows. I'm not saying Windows in a production environment is bad, but Microsoft can't ignore other operating systems anymore with a product like this.
