wtf is "Canon Color"

Can it be shown empirically that they have better color or is this just a widely accepted myth?

They do indeed have better colors. They use a red, which is a red redder then the red of other brands. Thus, Canon red > others red.
If you had read the red tech brief, you would have read about the red versus red differences.

Color is a very subjective thing, especially when trying to categorize one brand's color as "better" than another, because we all see color differently and have individual preferences. It's mostly marketing I guess.

I took this pic about 10 minutes ago with my new a75. I have no idea how to use it yet so it was just P & S. The room had very low light and I used the flash. I think the colors look good.
