I think the wikipedia article puts it best. Foodies are people who's hobby is all things food. They like to cook, go restaurant hopping, read about food, and try new things.

I went to college with one, who was also a hipster incidentally. I got saddled with editing the food column for our online magazine. He suggested we do a piece on this restaurant he loved, that served nothing but offal. Needless to say canned that idea. :p

Good stock does take a lot of time. But you forgot the salt.:'(

And I like to roast the meat for some nomnom color.

Teensy bit of a thread res...was away from ATOT over the weekend.

I don't salt my stock, I prefer to salt whatever I'm cooking it into. Agreed with the roasting meat, gives a darker, richer flavor. Another good one is *smoked* meats...holy crap does that makes some good stock and (especially) gravy.
