Sign me up. People has had depression cured from a poop transplant.
Mice given probiotics and placed in a tub of water were shown to swim twice as long as mice without in a behavioral study designed to test learned helplessness. To confirm it is indeed the probiotics communicating with the brain, they severed the nerve from the brain to the gut, the vagus nerve, and the mice given probiotics behaved like the mice who didn't receive probiotics.

The lining in sausage is made from the intestines, so depending on how well they clean it, there probably is some poop in sausage.

We have a running joke in my family about this; when making sausage or tripe, thats how we get that flavor that we love. The trick is to not clean the intestines completely, leave a little bit of flavor in there to contribute to the future flavor of the sausage or tripe. Don't know how true it is (I think it is a tongue in cheek joke) but I'll find out when I make sausage for the first time this summer.

Regarding the OP, yes I would eat this sausage. Its not "poop" sausage but rather contains bacteria found in abundance in infant excrement and not in adult. Supposedly it has health benefits. It's not like eating a sausage casing stuffed with shit as the title suggests.
