Sorry for the newbish ? but I'm not that good at networking.

My apt is wired with cat 5e with a gigibit switch at the central point. If I want to enable internet access to the house would I just need to plug in the router in any room or does it need to be routed at the central point?

More details if needed.

I think you should be able to plug it into any place that leads to the central location. All of the machines you want behind it though will have to plug into the router and not the other connections leading to the service provider.

Wouldn't the whole network be behind the router, if the modem is connected to the router, then from the router to the network?

If the Switch is Giga it is probably Auto sensing MDX, so you can plug the Router to the Modem, and one regular port of the Router can go to any cable in any room that goes to the switch. If it is Not auto sensing you would have to make sure that you use the right Cat5e cable, it might be straight or cross over depending on the ports ( http://www.ezlan.net/faq#crossover) ]
