with a venice chip, would dual channel work if 4 dimms of memory were put into a mobo?

Yes, and with the newer memory controller on the Venice, using PC3200 ram will now work @ DDR400 speed with 4 sticks.

You'll probably be limited to 2T though.

Better do a search or a scan
Lots of information and missinformation of 1 vs 2t
different motherboard bios call it different things- find a forum on your motherboard
called command rate
in general 1t is better unless 2t allows you to run your memory much faster
this is the next to last thing you need to worry about
last thing is hypertransport speed
follow the oc guide at top of forum
people have run 2z512 plus 2x1gb but is easier with Vencie E STep and similar and may be motherboard and bios dependent
remember any settings with more memory is MUCH faster than swapping/ thrashing
what apps are you running?

dual channel is only minor when it comes to AMD64 memory performance

it's more about timings and speed
