My chinese sucks (toisan) but we have many people who will be taking us around. No tours.... we pretty much know were we are going. We have people in Bangkok & Hong Kong to take use around.

It's the usual recommendation. You definitely have to go to the peak to see the view of Victoria Harbor. Go to Causeway Bay or Mong Kok to see what we mean by "crowded".

on top of Causeway Bay and MongKok,
check out Central area (the financial district) and Lan Kwai Fong (the bar area, go at night), take the ferry across the harbor to "Kowloon side" in Tsim Sha Tsui and walk along the 'coastal line."

if you have more time, check out the Peak. (you can take bus number 15 IIRC from the ferry in "HongKong Island side"
