I just want to doublecheck that this will work.

Computer 1:
Eth 1 connected to internet
Eth2 (wireless) 192.168.0.1 - gateway

Computer 2:
Eth1 (wireless) - 192.168.0.2 - client

---
Just a regular network setup with two wireless NICs instead of a crossover cable. It should work, right?

Yep, as long as you have some kind of internet connection sharing on the host pc. ICS, Wingate, Sygate. That kinda thing.
Make sure the Wireless NIC's are set to Ad Hoc, SSID is the same and frequency is also set on the same channel.

Wireless cards have to be configured to Ad-Hoc mode.

If cards going to Desktop, get USB Wireless Client.

I am not a fan of the USB wireless hookups, probably because i already have a USB printer and USB Scanner. ;)

>>>I am not a fan of the USB wireless hookups<<<

Most Client cards are PCMCIA, which work very well with Laptops.

For Desktop, it is usually better to use USB Wireless Card. Most PCI Wireless Cards with fixed antenna (stuck behind the PC) yield inferior results versus the Flexible Antenna on a USB card.
