Whichever one has all of the features you want/need. If you want media center, you have to buy Home Premium or Ultimate.

Check the comparisons on Microsoft.com.

If the cost isn't an issue, just get Ultimate for all of them so you have all the features.
 
Before you buy windows vista though, I would make sure your computer has enough power in it to support it.

As far as "performance" windows XP, will out perform windows vista. Vista takes more resources to run idle compared to windows xp.

Just a thought, to keep in mind is all.
