with the new remote desktop update you're able to change your display settings to highest quaity 32 bit on color..

when I try connecting to the machine and goto display properties it's at 16 bit still though.

do you have to do something on the computer you're connecting to .. to enable the 32 bit through remote desktop?
 
Do you have the network connection option set to LAN, it may limit some display options if you don't. I'll check on my settings once I get back home, but thats all I can think of.
