Hi. Just deciding what version of Windows 7 to get. (Home Premium vs Professional vs Ultimate)

If I need passwords to be remembered for MS exchange I need Professional or Ultimate?
If I don't want a person with physical access to the computer to be able to log onto a password-protected account I need Ultimate and need to use bitlocker?

(Currently on Vista Home Premium and fine I have to enter my Exchange password on each logon and that a simple boot utility can remove any password.)
 
Is bitlocker needed to prevent someone at the computer from being able to remove a password and log on to an account? I was quite shocked to find this was normally possible. Is there a substitute method to protect against this?
