Pretty much all you need to know:
1. Use add/remove programs to install IIS
2. Windows Update to patch everything
3. Download the IIS lockdown tool from microsoft (search for iis lockdown on their site)
4. Use the helpfiles to finish setting up IIS
For web serving it's just that easy. You should be able to go from newbie to a basic admin in less than 15 minutes...IIS does have SOME advantages over apache
Also, kinda like Spy said above: 2000 server should probably do you just fine. Advanced server just adds support for clustering & more processors. If you're setting up a site that actually *needs* advanced server (or even data center server) you might consider a different platform altogether (read: linux/apache)
