How long a period does one have after installing WIN 7 before activation?

I did a trial 64 bit install and after a few days while checking something in control panel, I spotted this in the lower right corner, "auto activation in one day".
 
Win 7, x32, or x64, usually gives 30 days for activation.

In most cases these 30 days can be extended by typing via admin. command.com "slmgr /rearm" (no quotation mark), and you get an extra 30 days.

There might be some reminder to activate in between, but nothing happens if you ignore them.

Win 7 Enterprise usually get activated through Vol. Lic. local KMS server. Otherwise, it would automatically connect to the Internet and activates after 3 days through MS Servers.

The trial version of Win 7 Enterprise is meant for IT people and it comes with the Key embedded in the iso. However it has to be activated as mentioned above.

Other trial versions might vary from the above depending on the type of the trial.

The condition to each trial should be described were you initially (legally) obtained it.

I have a legal Windows 7 Home Premium, boxed with with two discs: 32 bit & 64 bit.
If I activate the installed 64 and after awhile decide to install the 32 over the 64? I supposed it would then have to be activated.

Yes, you'll have to re-activate after every reinstallation. Is there any reason that you're thinking about going 32-bit instead of 64-bit?
 
No issues switching between 32 or 64 bit with the license provided when you bought the OS. Just remember, the key can only be used for one or the other at any time. Not for both at the same time. And you may need to call in to swap from one to the other.
