Why would anyone like cheese pizza?

Sounds fantastic, where are you getting your recipes from? I've probably got a good recipe for the dough but I've never tried it out because I would abhor making it at home using store bought sauce and cheese.

For a beginner I HIGHLY recommend getting a digital scale. You will find dough recipes using weight measurements. I wouldn't use volume measurements. Their are two methods that you can easily use to mix the dough. If you have a kitchenaid mixer, just use the dough hook. If you don't have one, you can actually use a food processor to do it.

The biggest secret that took me a while to learn was that autolyse is EXTREMELY important. It is in fact one of the most important steps. I can't tell you how many times when I started trying to make dough that I screwed it up. I had to use a rolling pin many times which makes for a horrible crush and dough.

After you get the basics down, you can do small experiments to perfect taste and the style dough you want.
 
Shitty cheese pizza is shitty.

A great mozzarella cheese pizza on the other hand... it's like focusing on the best part of pizza- the delicious cheese.

Moonbeam, I love myself; I am awesome. I can only feel a smidgen of pity for others when I realize how much they must loathe themselves for not being able to live up to the same level as I do. It's ok though, you're not alone.

Thanks. I already make a ton of bread myself, so I've already got a stand mixer, set of digital scales, quarry tiles in the oven, and whatnot. Just never got around to trying my hand at pizza. I've got a few bread books lying around an the "Bread Baker's Apprentice" by Reinhart has some pretty good recipes in it. There's a pizza dough recipe in there too that I have been wanting to try.

The majority of folks here consider Domino's the bomb, what do you expect...

Dominos eats shit. I'm not a pizza snob by any stretch, but if I want pizza, and Dominos is the only option, I'll usually get something else; maybe McDonalds or something.
 
"Cheese" pizza is irrational.
There is already cheese on all pizza. Why not get a different topping?

No. Although cheese is usually considered a standard and/or "free" topping, people who really love cheese will request extra cheese in lieu of other toppings or some variant (like a 4 or 6-cheese pizza). Maybe they just love the taste of cheese and don't want other toppings distracting from the cheese flavor. Like you pointed out, maybe they are extremely picky eaters and don't want other toppings period (most will usually at least be down with pepperoni or sausage, though).

Nothing wrong with a cheese pizza that has extra cheese... :thumbsup: And this is coming from a person who does usually prefer other toppings, but I can certainly enjoy a slice of cheese pizza.

I myself, having discovered that while I can tell time, I just can't tell it much so I stopped wearing a watch altogether. Time has stopped at two hairs past a freckle.

I did, however marvel, a word you don't hear used too often, at what in the way of time pieces can be had for so little money.

Also i'm sure not everyone here is getting their pizza in NY where the best pizza in the world is made, therefore must resort to toppings to mask the inferiority of their pizza

Nah upside down cheese pizza where the sauce is on top > than all others.

One of these days, I'm really going to get into more DIY with food. If I stay in this region, might be the only way I can truly get amazing pizza too. Really want to get into breadmaking.
And after checking out that site, it reminds me how much I want a mini wood-fired stone hearth oven. 🙂

But I'm also not a food snob. [I prefer to be, in some rights, but laziness and cheapness combat the desire to pay and put forth effort, and then there's the planning aspect.] I laugh at the people who refuse the major pizza chains. I don't ALWAYS want specialty pizza - hell, you gotta pay more for it anyhow (at least here in the regions it's not "the norm"). New Domino's is good, imho, for cheap pizza. I refuse to pay for Marco's, and Little Ceasars is only warranted on rare occasion. Hungry Howies has a tasty "regular" crust too, and I have to admit I really like Papa John's Tuscan Six Cheese pizza.

There's a local chain around here, The Original Gino's, that is quite polarizing. It's got a NY-style-ish dough, thinner and chewy, but yet not NY-style. And the sauce is sweetish, and very cheesy. Basically the sauce is either loved or hated the most.

We have a pretty damn good pizza place here in town but I got sick of paying $20 for a pizza. I am a cheap bastard and I felt that with experience and experimentation, I could get pretty close in terms of quality at a cost of a few bucks a pizza.

The one remaining piece for me is either a brick oven or earthen oven. I am waffling back and forth on which to build. Both will make a fine pizza and my cheapness keeps pushing me towards earthen.
