Why is Mexican food so hard to digest right?

ive been having to go to a gastroenterologist my stomach is so fvcked up and he says its the wierdest thing....i can eat all sorts of spicy mexican foods, salsa, etc just fine, stomach will react badly but not as badly as when i try and eat something like applesauce or rice dishes which are supposed to be more "neutral"

I eat Mexican food constantly since, well, I live in Mexico. Doesn't give me any problems or anyone I know, Mexicans and gringos alike.

I absolutely love Mexican food, but even after years of eating it I still spend a fair amount of time in the bathroom afterwards. And no, I'm not talking about Taco Bell-like "Mexican" food either, because if you feel normal after eating that, something's wrong with you. I just don't understand why me and everyone I know gets indigestion after eating it, and how a whole country eats it regularly (I'm assuming the country of Mexico doesn't collectively have indigestion 24/7, but I guess I could be wrong...).
I have eaten lots and lots of Mexican food and don't recall indigestion issues because of it.

I recall around 20 years ago mentioning to a ~20 YO (?) guy who was playing tight end at a junior college (buff!!!) that I had issues after eating, would get indigestion if too active and his response stuck with me. He said he didn't adding "I'm always hungry!" Ever since, I don't baby myself after eating and do far far better. Rarely have indigestion issues these days. I did at one point, have old pills around to prove it but never take anything now.
