I've always wondered that. I think that in terms of physical traits, Jews tend to fall in between pure European people and people of African descent, although closer to Europeans, of course. But then in terms of intelligence, Europeans fall inbetween Jews and blacks.
Why have the Jews always been singled out?

You would actually need to read some good infomration for an answer.
You would find a lot of things. Such as, Jews are not unique. I can point you to whole empires who no longer exist, to varous ethnic groups also persecuted.
Perceiving Jews as exceptional on this is less about the history, than about their being a more thriving socieity today to tell their story than some who are wiped out.
Of course there's more to it and they are 'an' exceptional group, but that's part of it.
You could look at the thousands of years of history of them prophecied as a 'chosen people' - and you can look at a lot of other groups with books saying they're important.
You would find history about things like the role of the Jewish people in maintaining their own separate society as one factor.
You would find that in the same Europe that persecuted Jews, that Catholics and Protestants sometimes took turns taking power to kill each other.
You would find an interesting history where Christianity, somewhat like Islam, had religious proscriptions against doing things with money, like lending it for interests - but that practical needs made the Jews, who did not have those limitations and who were willing to perform services as 'moneychangers' and such, very much in demand even as society balanced that by shunning the Jews, with their money activities consider some of the lowest status in society, along with sewer work or the equivalent, IIRC.
A lot of this led to a long-time bigotry against Jews - even as Europe was also doing things like finding the 'natural resource' of slaves to import was a pretty good way to treat blacks.
Jews were the target of one of the worst ethnic attacks in history, by Hitler, for which the term 'genocide' was created; also, Stalin killed more Russians, particularly one ethnic group in Russia; Mao killed more Chinese, though it wasn't an ethnic target, but just crazy ideological policies, kind of like the crazy right-wing ideology people demand in the US today, the more they hurt the American people the more they demand te policies.
You would find a lot of history, a lot of barbaric acts and ethnic attacks, and a lot about the Jewish history, some good, some bad, much interesting - and much diverse.
There are Jews today who are like any other 'crazy' person who woriships their history to an extreme over anyone else - and Jews who are world-leading human rights figures.
When the Civil Rights movement happened in the US, for example - an issue largely not about the morality but about the power to fight the bigotry - the first major group of Americans to support the blacks and help win that war was Jewish-Americans, the ACLU has a disproportionate link to Jewish-Americans.
There's an interesting history of how Jews have functioned in various societies - such as the Roman Empire.
There are books. Just avoid the ones with propaganda, for or against Jews.
Hopefully, after you learn more of the history, you are able to both find things to strongly support and strongly oppose about Jews or Israel, where deserved, and not be like many, partisan about it.

Our OP actually asks a question with some meat on it, and all the initial responders come up with bullshit answers that shed a tiny bit of heat and zero light.
But to some extent, among the set of conquered nations which the Jews have been quite a few times in there at least 4000 year history, the Jews are quite remarkable in maintaining their separate cultural identity in tact all during those 4000 years.
In all seriousness I ask, is there any any group of people in world history that can duplicate that feat? Even though the forces of nationalism is strong, the fact the Jews
have maintained their national identity and roots for that long is absolutely unprecidented in world history. We might point out that the Vietnamese, the Afghani people, and Japan have a 3000 year history of cultural identity that competes, but only the Jews have maintained that identity after being dispersed all over the world in events broadly called the first and second diaspora.
I also maintain as I have in the past, that any nation that discriminated against Jews and expelled them soon went into decline, and any nation that took in expelled Jews gained in the process. But sadly when Jewish influence becomes a vast majority in any nation, the Jewish compiled record is not as stellar.
Just my student of history observation.

Color me somewhat surprised that after three hours, no other poster has weighed in on this thread, to add or detract to what I said.
But I would like to add in some more insights in the role of the Jewish religion in Western culture. Because maybe a distinction must be made, in terms of world religions, there is a divide in terms of East and West. In terms of Western religions, multi theism dominated the political thought in most of the Western world even a few hundred years after the birth of Christ. That there was a god of war, a god of the sun, a god of women, take your pick, be it a Greek god, a Roman God, a Norse God, don't push, don't shove, every one can pick one to favor, just don't offend the rest of the de Gods in the process. Maybe the first to champion mono theism was a rather unpopular Egyptian Pharaoh, but early Jewish people circa 4000 years ago were also pioneers in monotheism. And even if mono theism faltered in Egypt, it stayed unabated as the holy grail among the Jews. Meanwhile in the whole fast shuffle sweep of Western history, Judaism became the founding root of the far more universal religions of Christianity and later Islam. Because unlike the the purely Jewish religion of the Jews, where silly rabbit,
being Jewish is only for those already Jewish, the daughter religions of Christianity and Islam were evangelistic and eager for new recruits.
But meanwhile I am getting maybe 600 years ahead of the formation of Islam and 200 + years ahead of Christianity. Because the dominant world Western power was Rome and that was true even before the birth of Jesus Christ. To assume the later execution of a rabble riser like Jesus was anything but a minor event on no ones radar screen at time would have been a 99.99 % slam dunk certainty. But every once in a great while the improbable happens.
Two events later became the telling factors. (1) A number of Jesus disciples excited Israel and headed in the direction of Rome, preaching with zeal the doctrine that Jesus Christ was indeed the son of God, and could save the soles of man. (2) As for the Jews in the holy land, never too happy with with Roman domination, screwed the pooch, over played their hand, got on the last Roman nerve at Masada, and then Rome told the Jews to vacate Israel and don't ever come back. Which as far as the Romans were concerned fixed the Jewish wagon.
Meanwhile the Christian were targeting Rome itself. the more the Romans repressed them, the more recruits the Christians got, until many hundreds of years later they found sympathetic Roman Emperors and became the monotheistic state religion of the Roman empire. Just in time to see the Roman empire fall from other causes. As Job two became to convert all of Europe to Christian domination. As the former Roman empire fell into multiple competing proto nationalistic states with the only unifying factor being the Christian church.
A European period of history now referred to as the dark ages, and for a very good reason. Only two entities kept any European scientific knowledge alive, and handful of Christian monostary scholars and a handful of Jews were scarcely equal to the job.
Meanwhile and somewhat later some obscure Saudi Arabian religious poobah somehow united a corner of left field with his inspired life as he founded the religion of Islam borrowing heavily from the Jewish faith, and after his death his followers took advantage of the anarchy of the times to sweep out of Saudi Arabia, gaining recruits as they went, and in only 100 years, founded an Islamic empire that stretched North into France and as far East as the Phillipe Islands. To assume that mere ignorant Saudi Arabian ignorant military men could have accomplished that feat only by military means is absurd, but as the Islamic hordes of Saudi Arabia swept north they collected the cultures of scientific Jews and Persians. And for the next 600 years Islam was far ahead of Christianity in scientific and cultural knowledge.
Meanwhile, in both Europe and the mid-east Jews maintained their separate cultural identity, and unlike Christian and Muslims, they had one unique and very useful difference. While Christians and Muslims of the time considered it a sin to loan money at interest, the sin of usury, the Jews never had any problem with usury, the Jews became necessary very useful people in both the Western European and Western Islamic world.
Because at the time, in both Western worlds, warfare was the way to be elevated from a small potato to a big potato. Do onto them before they do it to you. But but but to make war and not love takes money to buy arms, recruit soldiers, and the Jews were the go to guys willing to lend money at interest.
Borrowing money is always grand, all that free money, but paying it back at interest is always a bitch. To some extent that is the early roots of some antisemitism as some borrowers got the bright idea if they could demonize the jews and then expel them they could avoid the unpleasant prospect of paying the money back.
By AD 1500-1600 the Western world started to change, as new ways of Western science finally outstripped Islam, and Europeans excelled the former dominance of Islam in war fare and technology.
In terms of the newly discovered American continent Christianity had the inside track in gaining new recruits. And once Protestants broke the Roman Catholic monopoly they said me too to Usury. What followed was a 500 year period of the rise and fall of European colonialism, and as a very small group, Jews have rolled with the punches while compiling a very mixed record.
As for the Eastern parts of the world, the religions and beliefs are quite different, but now as we now become one world at an ever faster rate, we all have to get along or else.
The past baggage of past religious hatreds are becoming increasingly dangerous, but its no reason to assume we can't find a better future.

Well, nobody cares about the Gypsies. Anybody who's spent any time in Europe wishes he'd finished that particular job.
The other specific groups are all small. The rest is just, "civilians," not a specifically targeted group. Poles and Russians didn't fare well.

"Pure European" is hard to define as a race since Europe is very diverse. Those pale face Swedes are European, as are the lightly colored Spaniards.
Jews look African because many of them are African. Egypt is part of Africa. Libya too. The holy land they eventually ended up living on is part of west Asia.
Anyway, Jews are hated on because they're the old religion. A few hundred years after Jesus died, Constantine made Christianity the official religion of the empire. Jews became a minority of people who stuck to the old system. In other parts of the world, Islam became the majority religion while Jews stuck to the old religion. Again, they were hated on because they refuse to change. The jewish community is like that one family of atheists in your god-fearing small town. You can search youtube to see what that looks like (atheists of today and jews of yesterday are hated more than any other minority group).
In somewhat recent times, Jews were seen as evil money handlers because they didn't seem to follow any of the Christian ideals about money. In the new testament that only Christians care about, there is a man named Simon Magus that attempts to buy the power of god's followers. Because of this passage in the Christian bible, money has always had an evil feeling associated with it. You're not supposed to handle money, and you sure as hell can't lend it out with interest. Jews do not follow this rule, so they tended to be the only ones either willing or even allowed to lend money. If you wondered why banking is controlled by Jews, this is why. They were the only peopled allowed to operate a bank without being arrested or shunned or excommunicated. This does two things. First it creates a lot of jealousy because banking is awesome, and it creates a lot of distrust and anger because these people are doing something that is seen as immoral. Again, Jewish people are hated as much as atheists are hated because they don't follow your community's belief that Jesus is the savior or that any of the stuff mentioned in the newer books should be followed.
Another reason Jews are hated is because much of the Jewish culture focuses on being successful. Look at how many nobel prizes have been won by Jews. Jewish culture is a bit like the stereotyped Asian culture; anything less than 90% on this test and your ass is getting the belt. Because of this cultural difference, Jews on average tend to be more successful in life, and that leads to a lot of jealousy as well as conspiracy theories. Why are so many Jews lawyers? Grr it must be a conspiracy. Doctors? That too must be some kind of conspiracy.

My home is on the California coast. Landscapes in Israel are somewhat like southern California from Orange County (i.e., Tel Aviv area) up to San Francisco (i.e.; Haifa), but all in much smaller scale. The hill country around Nazareth reminds me of the mesas around San Diego, again in much smaller scale.
I’ve been all over the country many times. During scant free time (too rare!) I personally like hanging around the places highlighted in the Bible New Testament, trying to feel deeply as beyond-humanly-possible as I'm able, stretching beyond what I’m able, to t a l l y still the racing thoughts and feel an intuitive sense of vicarious participation in events that occurred there, historically. So that’s where I am.
