why does this can of frosting need to refrigerated after opening?

it's sugar and oil

shouldn't it be fine in a cupboard?

i frosted some cookies and only used like 1/20th of the can

if i put it in the fridge it will get all hard and the surface will turn yellow i think

i think they tell you to put it in the fridge so it becomes unappetizing and you throw it away and buy more

Maybe the oil will go rancid sooner if you store it at room temperature.

Because they want you to think it's real (made with dairy) and not the oily garbage it really is. Most people don't read the ingredients list. Out of the few who do read it, even fewer still understand it thanks to the intentional obfuscation by the manufacturers.

It's all about bacteria growth after being exposed to air. I'm not sure how it's packaged (in a vacuum or what), but I do know that they are typically sealed with a foil seal on top of the plastic can.

Imagine that the can of sealed frosting is like a sterile petril dish filled with agar. After you unseal it you are essentially swabbing the surface with bacteria and fungal spores just by allowing the air in the room to come in contact. If you put the lid back on and allow it to remain at room temperature the happy microbes start building happy little colonies.

Frosting will go stale if you let it sit out for a really long time. You don't have to refrigerate it, but I wouldn't leave it out for a couple of weeks.

You should use your spoon and eat whatever remains of the frosting before it goes bad. Sounds like it can not be trusted inside or outside of the refrigerator.

Exactly, I thought most Americans downed it all in 1 serving. What good is putting an empty container in the fridge.

The oil will oxidize faster at room temperature. Refrigeration will also hinder yeast and mold growth.

I don't think mold will grow on anything with that much sugar in it. How often do you see moldy candy? :)
