Why does leftover spaghetti always taste better?

I actually look forward to the day after I have made it and it has sat in the fridge overnight.

Anyone else with me?
 
tomato sauce needs time to develop to work out the acidity/sweetness, that's why you cook it all day long. You're probably also running into the pasta has taken on the flavor of the sauce a huge amount.

I would agree. Chili's always better the next day, too.
 
With pasta, the sauce absorbs into the pasta, then condenses...making it more flavorful.

Same deal with chili and soup- less water = stronger taste.
 
i prefer fresh pasta. shrug.. i do enjoy it the next day but not as much... same with pizza.. but the next day it has to be cold pizza breakfast 😀
 
Spaghetti sauce(without noodles mxed in godamnit!) just ages very well(for a limited time). Just because it gets chilled in the friidge doesn't mean stuff isn't still going on. Same goes for chilli and many other foods.
 
It always tastes better fresh but it can taste almost as good if it has been in the fridge contained right.

Whenever I cook spaghetti, I always cook 2-3 pounds of noodles so I will have left overs the next day. I am a lazy cook.

Concur, it's about the style of the sauce. Ragout-type sauces are slow cooked, and extra time to develop can be good. Some other sauces are much better fresh. IMO, the pasta itself is always better fresh.

Day two chili is the best.
 
I totally agree. I like spaghetti all right, but the next day, MAN, I love it, especially the sauce. I could eat day-old refrigerated spaghetti sauce with a spoon for a meal; it's so much better than the night before.
