i don't stick my tongue out because it makes it harder to continue my string of obsenities (which are how i indicate i'm working hard).
 
I did it once when I was little while trying to balance in a weird position, and then I fell over and almost bit my tongue off.

I still have a tongue scar!
 
In my psychology class, I learned that by biting on something you use those muscles in your fact that are the same muscles as smiling. When sticking out the tongue, it seems to be the same muscles. Maybe its a form of being excited that what you're concentrating on is about to be acomplished. Like being happy, and holding in the excitement?
 
I play the piano, and I studied it seriously for many years (advanced degrees). It's not uncommon for me, or other pianists, to do that while playing intently.

Evidently the part of the brain associated with intense brain-muscle activity is very close to the part of the brain that sticks the tongue out. So it gets some of the electro-brain impulses.
