Because you've never had a really good fresh peach.
The ones we get here are usually California peaches. Picked unripe to ship all over the continent. Pure garbage, IMO. Same with tomatoes. Canned, they are picked ripe. I only buy fresh peaches in the summer. So much food is the same. Picked and packed for agribusiness reasons, taste and texture are at the bottom of the list of priorities.
If you are ever in Southern BC or Washington State in late July, buy a local peach from a farm stand and see if you feel the same way.
