Why do baby bananas turn red when steamed.

That looks pretty good. Of course I've grown up with something similar to that. Different type though. We had red bean and pork I think.

Actually, caramelization is no doubt the underlying answer, and the resultant red instead of brown is probably due to something else in the banana interacting with the caramelized sugar.
