Why do baby bananas turn red when steamed.

I notice when you steam baby bananas in some food items they will turn a deep red color. Anyone know the cause of this.

I can't say I know anyone who eats steamed baby bananas. Maybe that's why you're not getting many responses.

Hmm... I never heard of steaming bananas.

I fry plantains, and I eat Cavendish and the little red bananas raw. And when they come, I eat ice cream bananas raw off of my banana tree.
