Why do action movies always include a restaurant kitchen scene?

I am watching Heat right now, and just like a whole lot of action movies, there is one restaurant kitchen scene. Usually the bad is in the kitchen either talking to someone on the phone, or taking care of his enemies. Why this location? So that they can get rid of the bodies easily?
