why did bacon become trendy in the later 2000's?

Hogs were developing stomach cancer from all the hormones. Making bacon was a way to cure the cancer.

I liked bacon before it was cool. :colbert:

I bought into the sriracha craze. Thicker than Frank's, so it's good on pretty much everything that needs a flavour boost.

i don't mind that at all either as so many more restaurants, outside of chinese and vietnamese joints, have it now instead of just some shitty tabasco. (although some do try to pass off some sriracha imitation; you can tell...you can totally tell.)

It's don't think it's so much imitation. Sriracha is a type of sauce, not a brand. Huy Fong Food's is just the best known. Probably the best tasting too. But there are different variants. Lee Kum Kee Sriracha must have fish oil mixed in, because it has a slight fishy taste.

That's how I make my coffee... well, without the scale of course.

I use this method because I'm the only person who drinks coffee in my house so why make a whole pot for one person and why have a useless appliance that basically just heats up water and pours it through a filter basket?

Well you also have the French Press (Bodum's seems good) that can achieve the same thing. Hope your not using boiling water, either (190ºF or thereabouts is optimum).

No, I like the water around 195F. If it boils I'll just add a little cold water to bring the temp down.

Bacon is good, but it gets lame when everyone on TV yells about it. Best hot sauce is Trappeys, can only get it in the south though.

Have you not seen the rise in popularity and marketing of bacon?

I mean, everybody has always liked bacon. But, bacon is everywhere these days.

I mean, you couldn't get bacon salt or bacon soap last decade. ;)
And all the bacon sandwiches these days, far more exist today than ever before. Not that anyone is really complaining... or are they? If so, they're unAmerican.

Or, if you have more money than sense, just buy a Keurig and be done with it.

I suspect that it has something to do with the change in public perception of high-fat foods, which lags behind the change in scientific perception of the same. Remember, high-fat was considered to be really unhealthy back in the 70s-80s, which must have led to a decrease in bacon consumption. Once newer studies came out that contradicted this paradigm, high-fat diets such as Atkins, Paleo etc. started getting popular, and that set the stage for bacon's comeback. Combine that with the onset of social media, and modest shifts in the average diet turned into "OMG THE HOTTEST NEW THING!!!" as smartphone-obsessed gourmand-wannabe kids started giving bacon a chance and liking what they tasted.
