I'm not sure if he means quality of pork, but quality of cooking it. I've home cooked pork that was amazing but it took quite a few hours in a crock pot.

I went to a mexican restaurant yesterday and their shredded pork was good, but not well shredded.

Another place does it perfectly and it's ridiculous.

Hammer a nail into your forehead, stat! Tacobell is where you eat when you drive into a town late at night, check in to the motel, and realize everything is closed but the Tacobell and McDonalds and the bag of cheese combos that got wedged between the seats last summer is empty.
