Carpaccio, steak, etc is not processed through a grinder like hamburger meat. That's where problems arise. the process exposes more of the meat to the air, and more bacteria. The bacteria that may have been on the surface of that meat is now spread throughout.

Typically, the types of bacteria one must worry about when it comes to beef can't penetrate far into an un-processed cut. (steak, for example). This is why a good searing on the surface is all one really needs to be safe when it comes to steak. This is also why the same does not apply to burgers.

*Disclaimer: Places that give you no choice (e.g. McDonalds, Burger King) don't really serve hamburgers, so they're ok.

This is what I go with. I'm not big into burgers, anyway, so I'll only order one if I can't find anything else on the menu.

If I'm grilling, burgers is the last thing on my mind when considering the types of meat I want to cook.

I really don't understand how eating a burger rare would be considered a perk. But I'm part of the uncivilized masses.

Also, I have had a viscous intestinal microbe. It felt like a live raccoon trying to claw it's way out of my stomach. I know what birthing the alien feels like. I literally shit blood. That's when I went to the hospital. I could have died. The doc said it could have been something I ate, or the bug could have found any number of paths inside me. The point is that I didn't change any of my habits over it, because normally I do not get sick, so why change anything. I have never had anything like it since. I eat all kinds of raw food, I get all my meat including pork rare (chicken is hardly meat), and I don't bother with hepa filters, bottled water, or antibiotic gel. I drink from others glasses with no reservation, and I will eat food past the expiration with impunity. I don't even care usually if I drop something on the floor. The floor's clean!

I ahve a friend who is the opposite of me. He sends me articles about what happens when you flush a toilet. He takes a shower every time after he takes a shit, IRregardless of how inconvenient that is. He lives his entire life in paralyzed fear of microbes. He is one of the smartest people I know, but on this issue he is utterly retarded.

Well done for me. I like it cooked.

On a side note, I've noticed that at In N Out, you always get a well done burger, and most people like their burgers. I'm willing to bet that many of those people also order their burgers rare from places that ask how you want it cooked.

It's rare you can get a true medium burger where it is mostly pink through out. Even more rare if you get it a nice medium-rare, but that's what your grill is for.

A place around here makes good burgers and if you get the bison burger they will cook it medium or medium rare for you!

Depends on the place...if it's a nice place that I can trust gets good meat and treats it well, then I'll go with rare. If it's a not so nice place, then I'll go medium rare.

Really, a nice burger cooked to perfection rare...there are few sandwiches better...

Wow. Finally, someone who has the correct attitude about life. The beauty of this approach is that people like you and me have powerful immune systems that will ward off common bugs that will cripple the germaphone who spends his/her life constantly sterilizing and disenfecting everything. My children will not have allergies, asthma or other ailments because I'll throw them in the yard, naked, to eat dirt and worms.

The main thing that boggles my mind is the total lack of awareness on the issue. People wash their hands, but fail to realize that simply BREATHING will negate any efforts to ward off germs because guess what, you're SUCKING THEM IN constantly. Smell someone fart in line at the bank? That's right, you're inhaling/ingesting ANAL PARTICLES. Ever go swimming? Eat? Sit in a car? Bite your nails? Kiss someone? Pet a dog?

I've known people who are total germaphobes. . . except they let their dog lick thier lips. "aww, he's saying hellow." Yeah, you'll let your dog lick your mouth but you won't eat a medium rare steak? Ridiculous.

I'd make out with you even if you didn't brush your teeth.
