Oh so full....barbecued up a fat tri tip steak tonight...........musta ate about a pound of it 😛

I don't remember having this cut of steak back in PA.....where besides California do they have it?

Man are you full of bull, or at least a pound of it. I wasn't aware that California meat cattle had a different anatomy then the cattle from other states. You would have thought that you could get tri tip from cattle in any state.

You betcha. Eat it all the time. It's actually not a real premium cut compared sirloin and short loin sections. It comes from between the top of the round (ass end legs) of the animal.

It's called tip steak, tip roast, cap steak, or top round roast outside of California.

Where's the BEEF? Yum.

The cut and the way the meat is prepared is unique to California, especially Central California. I suppose it has moved other places, but most people haven't heard of it. Here is a little history on it.
 
Being a Texan, I'm suspicious of anyone who says "barbecue," especially from California 🙂 To me, "barbecue" means briscuit and dry rubs.

how did you prepare it, if i may ask?
 
I'm surprised. I thought EVERYBODY know what Tri tip was. I remember that from the early 80s. If you are in a hurry and cook it wrong, it is a scarry thing.
