Good question. Not sure, yet, but it will definitely be somewhere in Tampa. ;-)

Two, unless you already have something to put the roaster over. In that case, I'd get 3.

none. You BBQ that pig.

-edit-
#2 looks best if you must do that. The shields will help.

I ended up getting the SpitJack. Here is my first attempt:

The skin was not crispy, so I plan on flaming it up next time.

while driving back home today saw an interesting site; while passing a strip mall I noticed one of those 55 gallon drum on it's side look-like smokers going and then noticed the store at this end of the shopping center was a BBQ joint. can't attest to how good there stuff is, but looks like it should be pretty damn fresh.

I got the pig at the local grocery store cleaned and prepped. They sold it for $1.69 / lb. I ordered a 40-lb pig. One thing you need to realize is that grocery stores normally have their pigs frozen, so you need to make sure that you order it more than a week in advance and ask them to thaw it out in their cooler for at least 5 days. I had the pig sitting in the cooler for 3 days, and it was still semi-frozen. Another two days will probably get it into shape.

Also, I used 3 bags of charcoal to cook the pig. I think they were 18-lb bags. I paid about $15 for two bags at the local store.
