I would recommend xp myself, since it's got a nice interface (I see that as important) and user friendlier.
But my friend has w2003 and he claims that gaming is prodigiously smoother in that os than xp.
So, your choice =)
The less bloat of W2K is what got my attention. I have a gig of ram in the system W2K just seems to run better and most businesses are still using it rather than XP Pro.

You can turn off the bloat in XP. Also it shouldnt really be considered bloat anymore, maybe back in 2001-2002 where it might actually have made a difference to performance but these days i dont even notice a difference with visual themes on etc.
Either is fine but i would choose xp for compatibility reasons.
