Which monitoring software?

As a new overclocker and the proud owner of a fancy new rig, I'm wondering what software people use to monitor CPU temps and fanspeeds. The Soltek hardware monitor has very little information; Everest reports my CPU temp at 120 celsius or 80 celsius, switching every 5 seconds (BIOS says it's 38)...

What do the pros use? Or rather, what do the people who use freeware use?

MBM (its able to read the cpu diode temp, and socket) that is if your system supports that.

Asus Probe (this app is nice because it can display the time graph history of the reading)
