I've been out of the videocard loop for awhile. Which is better?

2 X 8500GT 512MB?

OR

1 X 8800GT 512?

the 8800 no contest. the lowest SLI pairing you'd want to bother with would be two 8600gts but if you don't already have one the price would come out to almost as much as the 8800 making that pointless to.
 
SLI isn't worth it unless you're pairing two high-end cards. Go for the 8800GT and don't look back.
 
I believe that a single 8800 GT should be like 10 times faster then those two 8500 Gt's in SLI.

Sounds about right. 512MB on a 8500GT is a waste of memory and a marketing ploy to impress those who think that memory buffer size is a direct indicator of performance.
