Is there a good board for overclocking a Quad that will allow me to keep my memory at 800mhz but continue to overclock the CPU? What chipset should I look for?

if you want unlocked memory & CPU buses on an Intel quad board that means an nVidia chipset.
Of course nVidia chipsets have other issues ...

By using a lower CPU:RAM ratio (e.g. 1:1) on an Intel chipset you can overclock a quad & keep your memory at/under/around DDR2 800.

my friend has a dfi 680i lt- there is a neat setting on it where the memory is "unlink." I think it just changes multiplier fractionally to keep the speeds the same as they would be with no oc'in.

Yeah, if you have a q6600 for example, you would (if you're lucky) be able to overclock it from 2.4GHz (9 x 266) to 3.6 GHz (9 x 400) and still keep your DDR2 memory running at 1:1 (2 x 400). I have the ASUS Maximus Formula (X38).
