I second a cruise. Very easy to get one under $1k. I would guess around 550 for a 5-7 day cruise, plus flight, plus whatever you do on the boat.
My wife and I did this recently, and plan to again next year. It's a very affordable vacation. Cruise cost covers all food you eat on the boat, and many drinks (not soda or alcohol though, but you can get coffee/tea/punch/lemonaide/etc free)
A cruise not only travels to great destinations, but there is a ton of (included) entertainment on the boat.
If you drive to the cruise port, you could almost take 2 people for ~$1k.
