Being diabetic, everybody and his brother has come up with a miracle plan to fix diabetes. All of my MD's advise different things. It is very annoying.

Now there are popular books all about wheat being the cause of diabetes and how eating healthy fat cures all sorts of things.

Plus, my arthritis MD's - 40 years of thems - are all talking about different things.

Where can I find scientific accurate information about nutrition?

I don't have a good source for you, but I can see the issue for sure - there's so much conflicting information out there, and a lot of it is simply old news, just not relevant anymore. I didn't realize this until I started working with a few people who were diabetic and would see them eating sugar and pizza and stuff. Apparently you can pretty easily control it through your diet, i.e. protein-loading before having ice cream or whatever, you just have to change your habits to accommodate what you like to eat. For Diabetes Type II only iirc.

I think if you eat clean (the less processed the better), you're on the right track. Lean meats, lots of fruits, veggies, etc. No sugary junk, soda, and the like. Keep a food diary to monitor stuff like wheat or dairy intake to see if you body reacts negatively to it.

Funny, I've heard quite a bit about wheat & dairy adding to diabetes. Guess that's one benefit to being allergic to both of them
