I really want to buy an old iphone 8gb but can't seem to find them on sale anywhere, besides overpriced ebay.

Apple depleted most of the stock towards the middle of last month in anticipation of the new model. I've heard you can randomly find some at your local AT&T store, but its gonna be a big YMMV as most places have been sold out for awhile. The only other option would be to purchase a refurb from Apple's site or AT&T's, but stock isn't very plentiful in that arena either right now. The best time to check the Apple Refurb site is early morning, as they update the site around 4-6am EST.

Should a jailbroken, no sim / no cell phone service first generation iPhone still be able to be upgraded to firmware 2.0 without any problems? (I assume this would be by connecting to iTunes and downloading appropriate firmware from Apple?)

Yes, an original iPhone should still be upgradable to firmware 2.0 when it's released. You'll need to use one of the jailbreak/unlock/hacktivate programs though.

If you aren't using an original iPhone as a cell phone on AT&T's service, then installing any firmware from Apple will leave you with a picture of the planet earth and a request to activate the phone with AT&T and iTunes... which leads you down the path to signing up for service.

You will have to wait until the new firmware has been hacked before you can upgrade. Although I'm pretty sure that the Pwnage tool already has it hacked. But you wont just be able to click update in itunes otherwise you run the risk of a brick.
