In the US Is there a default type of whiskey that they will serve you if you ask for rail whiskey? Do they give you Irish or Kentucky Bourbon?

You get the cheapest American whiskey that may or may not be bourbon, but not Irish.

In the U.S. I'd guess bourbons are most common. Brand depends a zillion percent on the bar, but I see a lot of Beam and Dickel.

Just ask for a "Jack & Coke" if you want JD. I would assume that's the default whiskey most American bars have. That's really the only brand of bourbon I know of and most bars stock it. It's like here when you ask for a "Rye and Coke", they use a lot of Canadian Club.

Most of the time its Jack Daniels, but if the bar has a deal with their liquor supplier for a generic cheap american whiskey in a plastic 1/2 gallon squeeze jug, you are getting that.

Whatever they have. It varies by establishment, but it'll be the cheapest.

Is there a difference in the taste/production process of "American whiskey" and Kentucky Bourbon, or are these the same thing?

Bourbon whiskey can only be made in Bourbon county Kentucky, all of the rest is american whiskey.

I don't think that's correct. I don't think it has location requirements, only production requirements.

with just about any cocktail, if you don't request a specific brand of liquor, bartenders tend to put in whatever the cheapest or most common brand they have.

Any decent bar will stock different brands of whiskey, just ask them to put whatever brand/type you prefer in your drink.

Unless you specify otherwise, they'll use whatever generic brand is cheap. And why not? You're pissing coke on it anyhow.
