On windows I use vim cream http://cream.sourceforge.net/ (I used to use notepad++). On osx I use textmate. On linux I use vim and gedit.

I'm on a PC, so I can pick any number of free applications which are much better than TextEdit.app, and I don't have to pay a stupid tax for owning a Mac either.

Honestly, textmate is the best text editor I've ever used. I wish it had a windows and linux version.
