When using multiple monitors and gaming, how to "black out" other monitors?

I have 3 monitors and only game on the center one. Is it possible, other than turning them off, to have the side monitors to go to a black screen or at least not "weirding out" when gaming on the center monitor?

TIA.

eta: Vista Ultimate 64 if that matters.

Right click a blank spot on the desktop, click properties, click the settings tab. Click on a monitor and enable/disable the check boxes for "Use this device as primary monitor" and "Extend my Windows desktop to this monitor" as appropriate for each monitor's use.

You could also use Device Manager to "disable" a video card you don't want running.

I know those steps as well, thank you. I guess I was asking if there was a way for the computer to detect a game playing on the middle monitor and auto "blank" the other two. Maybe I'm wishing for too much here.
