I've always followed up by mail immediately after all interviews I've done since graduating college. It's worked 3 out of 4 times for me. IMO, its really easy to delete an email, but it seems like throwing a letter out takes more effort.

What makes the difference to me, sometimes, is when I have to make a decision between two neck and neck candidates: all else equal, the more professional one wins and an email = paper letter. In fact, I'll probably get the electrons, but not the paper - too easy to get lost in the shuffle at a larger company. (I am usually one of the decision makers on the hiring end for technical positions in my area - B.S. and Ph.D. scientists).
