XP Pro - Athlon 2600+ running @ 100% for 19 days straight now (Nero choked during a DVD burn and wouldn't let go of the drive). I usually get about 30-45 days between reboots unless I'm installing hardware or something.

If you're talking stability, there is no clear winner. Both XP and OS X are very stable. If someone builds a PC with crap components, stability will be compromised, Mac doesn't have that problem only because the important components (motherboard, RAM, PSU) are all the same in a given model of a Mac (no generics).

However, I have crashed OS X. I have never really crashed XP except when I was overclocking and got errors.
 
AMD 2200+, 512Mb Corsair ValueRam running at stock on XP. I usually turn it off at night unless I'm downloading something, because it's only 6 feet away from the end of my bed. But, I left it on for the past few days and it's going fine. I don't have an uptime counter (other than my AIM online time, which occasionally crashes), so IIRC the last time I restarted was saturday night. But, I've left it on for 8 days straight with no issues before, and I could probably go much, much longer if I was so inclined.
