Lowest common denominator types get all the fart jokes but underneath that there's a lot more going on that's hilarious IMO.
 
I agree that Connections was excellent.. fascinating to see how things are interrelated.

I also like:

Weapons at War: Tech Force
Mail Call
Conquest
CSI and CSI: Miami (although they're starting to get old)
 
Jeopardy
Simpsons - has a lot of brilliant but subtle social commentary
Most HBO and PBS documentaries
