Mine is Hocus Pocus by Focus, but I would consider Funeral For a Friend by Elton John. The latter is part of the contiguous song "Funeral For a Friend/Love Lies Bleeding", but I would only consider the first part. Interested in seeing other opinions.

The last track on Deftones' "Adrenaline". That CD is incredible, the way it flows, and that song is the perfect ending to it. (edit #2: now that I think of it this really isnt an 'instrumental' in the strictest sense. Chino sings, but not a whole lot and its at the end of the song. 80% of it is instrumental)

Edit: Theres a really short instrumental on Stone Temple Pilots "Core" album that's really good too. Too bad it only lasts like a minute or I'd have a really tough time deciding.

Actually, I think the "surf rock" category is kinda cool. e.g. "Wipe Out" by the Surfaris, or stuff by the Ventures.
